Corn Toasties

  1. .5c butter
  2. .5c + 2T sugar
  3. 2 eggs
  4. 1t vanilla
  5. 1.5t baking powder
  6. .5t salt
  7. 1.25c flour
  8. .75c + 2T cornmeal
  9. 1c milk
  10. some blueberries, optional, suggested
  1. Melt butter, mix with sugar, add vanilla.
  2. Mix in beaten eggs.
  3. Mix in cornmeal, flour, salt, and baking powder.
  4. Mix in milk, stir just until slightly lumpy.
  5. Mix in blueberries, if using.
  6. Pour into greased 10"x15" baking sheet, or muffin-top pans.
  7. Bake at 350F for 25m, cool 10m before cutting.
  8. Toast before serving.
