Corn Toasties
Toaster cakes, of fond newengland breakfast memories.

- .5c butter
- .5c + 2T sugar
- 2 eggs
- 1t vanilla
- 1.5t baking powder
- .5t salt
- 1.25c flour
- .75c + 2T cornmeal
- 1c milk
- some blueberries, optional, suggested
- Melt butter, mix with sugar, add vanilla.
- Mix in beaten eggs.
- Mix in cornmeal, flour, salt, and baking powder.
- Mix in milk, stir just until slightly lumpy.
- Mix in blueberries, if using.
- Pour into greased 10"x15" baking sheet, or muffin-top pans.
- Bake at 350F for 25m, cool 10m before cutting.
- Toast before serving.
