A halved burger.

Turkey Burgers

Grilled turkey burgers, with brie and sprouts, on brioche.
Yield: 12 burgers
  1. 2 pounds turkey thigh, ground
  2. .33 pound Emmenthaler, shredded
  3. 5T apple sauce
  4. 4 cloves garlic, minced
  5. 10 black peppercorns, ground fine
  6. 1t salt
  7. .5t paprika
  8. .5t sage
  9. .25t turmeric
  10. .5t dark soy sauce
  1. 12 small brioche buns
  2. 4 ounces alfalfa sprouts
  3. .5 pound Délice de Bourgogne (or other triple-crème brie)
  1. Mix all patty ingredients together well, form into twelve patties.
  2. Grill on medium-high for 7 minutes, flip, grill another 6 minutes.
  3. Let rest 5m before assembling on split brioche with smear of cheese and bed of sprouts.
