Turkey Burgers
Grilled turkey burgers, with brie and sprouts, on brioche.
Yield: 12 burgers
- 2 pounds turkey thigh, ground
- .33 pound Emmenthaler, shredded
- 5T apple sauce
- 4 cloves garlic, minced
- 10 black peppercorns, ground fine
- 1t salt
- .5t paprika
- .5t sage
- .25t turmeric
- .5t dark soy sauce
- 12 small brioche buns
- 4 ounces alfalfa sprouts
- .5 pound Délice de Bourgogne (or other triple-crème brie)
- Mix all patty ingredients together well, form into twelve patties.
- Grill on medium-high for 7 minutes,
flip,
grill another 6 minutes.
- Let rest 5m before assembling on split brioche with smear of cheese and bed of sprouts.
