Chevy's Sweet Corn Tamalito

This stuff was the reason to pick Chevy's as the chainmex establishment for an evening.

This easy implementation lives up to nostalgia.

Yield: 8 servings
  1. 5 Tablespoons butter, room temperature
  2. .25 cup masa harina
  3. .33 cup sugar
  4. .5 cup water
  5. 3 Tablespoons milk
  6. 2 cups corn kernels, cut from about 4 fresh ears; be sure to scrape the good bits out of the cob with back of knife
  7. .5 cup cornmeal, medium grind
  8. 1 teaspoon baking powder
  9. 1 teaspoon salt
  1. Cream together butter, sugar, and masa.
  2. Blend half the corn kernels with water until smooth, add to butter mixture.
  3. Mix in remaining corn and milk.
  4. Whisk baking powder and salt into cornmeal, mix into batter.
  5. Spread evenly into greased or lined 8x8 pan, cover tightly with foil.
  6. Cook in 325F oven, in bain-marie, water level 2/3s up pan sides, for 1 - 1.5 hours. Test doneness like cake.
  7. Cool 10m before serving with a disher.
