Cheese Straws
An easy favorite for entertaining.
Use whatever cheeses are handy; Jarlsberg, emmenthaler, gruyere, cheddar, parmesan all work well.
Improvise with any herbs and spices desired.
- 6oz firm cheese, finely grated
- 5T butter, softened
- 1c flour
- .5t salt
- .5t black pepper, coarsely ground
- 2T cream or milk
- Mix cheese with flour, salt, pepper, and butter.
- Add cream or milk (may take slightly more or less than specified), mixing until a dough forms. Knead once or twice to form a ball.
- Roll out to 1/4-inch thick rectangle, cut into 1/4-inch strips, transfer to parchment-lined baking sheets.
- Bake in preheated 350F oven for about 18m until just golden. Stack an empty sheet underneath, if bottoms brown too quickly.
