Cheese Straws

An easy favorite for entertaining. Use whatever cheeses are handy; Jarlsberg, emmenthaler, gruyere, cheddar, parmesan all work well. Improvise with any herbs and spices desired.
  1. 6oz firm cheese, finely grated
  2. 5T butter, softened
  3. 1c flour
  4. .5t salt
  5. .5t black pepper, coarsely ground
  6. 2T cream or milk
  1. Mix cheese with flour, salt, pepper, and butter.
  2. Add cream or milk (may take slightly more or less than specified), mixing until a dough forms. Knead once or twice to form a ball.
  3. Roll out to 1/4-inch thick rectangle, cut into 1/4-inch strips, transfer to parchment-lined baking sheets.
  4. Bake in preheated 350F oven for about 18m until just golden. Stack an empty sheet underneath, if bottoms brown too quickly.
