Dulce de Leche
Sweet goat-milk caramel sauce.

Yield: 1 cup
- 1q goat milk
- 1c sugar
- 1 pod vanilla
- .5t baking soda
- Mix milk and sugar in large pot (it will froth up a lot), add split vanilla pod and seeds.
- Bring to a simmer, stir until sugar dissolves.
- Remove from heat, add baking soda, stir well.
- Return to simmer, for about an hour, until it becomes lightly browned.
- Remove vanilla pod.
- Continue simmering for 20m for a thin pourable sauce, longer for thicker, as desired.
