Dulce de Leche

Sweet goat-milk caramel sauce.

Yield: 1 cup
  1. 1q goat milk
  2. 1c sugar
  3. 1 pod vanilla
  4. .5t baking soda
  1. Mix milk and sugar in large pot (it will froth up a lot), add split vanilla pod and seeds.
  2. Bring to a simmer, stir until sugar dissolves.
  3. Remove from heat, add baking soda, stir well.
  4. Return to simmer, for about an hour, until it becomes lightly browned.
  5. Remove vanilla pod.
  6. Continue simmering for 20m for a thin pourable sauce, longer for thicker, as desired.
