Tea Cakes

Crumbly little nutballs. A common variant includes cinnamon, but I find them delightful without.

Yield: plenty
  1. 1c butter, soft
  2. 1t vanilla
  3. 6T confectioner sugar (powdered with starch)
  4. 2c flour
  5. 1c walnuts, chopped fine
  1. Combine, in order.
  2. Refrigerate 30m to stiffen batter.
  3. Roll into 1-inch balls, arrange on baking sheet, 1.5-inches apart.
  4. Bake at 400F for 12m.
  5. Let cool slightly, roll in additional confectioner sugar, roll again once entirely cool.
